There is a wide range of specialities, since every region has its own characteristics. Lima is well known for its many gourmet restaurants and is a seafood lover's paradise.

  • Cebiche: fish marinated in lemon juice
• Anticuchos: Made of beef heart, tenderloin beef or corvina, pickled in vinegar and spices.
• Papa a la huancaina: over baked potatos with cheese & chili sauce.
• Aji de gallina: chicken with milky sauce, chili and herbs
